Cooking Chicken Curry Is As Easy As Pie

Chicken curry is a very well-known dish that has different versions and recipes depending on the region and country it is being served. It is quite fascinating that people come up with different ways of cooking it and putting more effort on mixing different spices and ingredients.

Like its preparation, chicken curry also has different history of its origin. Some stories dates back to the 1800 where a captain shared the dish to the servants in India. Some say that Indian servants which were forced to labor by the British brought the recipe to Trinidad and Tobago and was transformed into different forms and dishes.

Whatever and wherever the origin of chicken curry came from, you know for a fact that it is very good and delicious. Most people only eat chicken curry in Indian restaurants and other specialty stores. Many believe that preparing a very good curry dish is elaborate and time consuming. Some find the ingredients hard to find and very specific.

Need a new dish to serve your family and friends? Forget about take outs. A new and more exciting dish will surely impress them. Below is a recipe of a very Easy Chicken Curry that even you can try at home.

All you need are the following:

3 tablespoons butter or 1/4 cup olive oil
1 onion finely chopped
1/2 teaspoon ground ginger
2 teaspoons curry powder or curry paste
3 tablespoons flour
3/4 teaspoon salt to taste
3/4 teaspoon sugar
1 cup chicken broth
1 cup milk or coconut milk (if desired)
2 cups cooked chicken, diced
1/2 teaspoon lemon juice
3-4 cups cooked rice

Boil chicken in 2 cups water. When cooked, dice chicken and put aside chicken broth to be used later. When using olive oil, heat oil in a large skillet or if butter is used, Melt butter over low heat in a heavy bottomed saucepan. Saute onion, ground ginger and curry powder in melted butter or hot oil for 2 minutes to bring out flavors in curry powder or curry paste and aromatics. Blend in flour, salt and sugar.

Cook over low heat until mixture is smooth. Remove saucepan from heat and wisk in chicken broth and milk or coconut milk. Bring mixture to a boil, stirring constantly. Make sure that you stir because curry powder burn easily. Boil for 1 minute until sauce reduces. Add chicken and lemon juice. Warm the chicken. Put Chicken Curry over the cooked rice and serve with accompaniments on the side so everyone can top as desired.

You can top it with mango Chutney, chopped hard boiled eggs or bacon bits.

You can also use the same recipe when cooking beef curry, pork curry or seafood curry. Just make sure to pre-cook your meats and seafood before cooking the dish.
